Add Spice to Spring Recipes with Healthy Fresh and Ground Ginger

Cooking with ginger gives an exotic and sophisticated kick to any recipe. This versatile spice is available fresh, ground and candied almost everywhere and keeps well.

Ginger was a popular spice in ancient Greece and sixteenth century England. Ginger is a worldwide favourite today for both its unique flavour and health benefits.

Quick Recipe for Ginger Vinegar

Ginger vinegar is simple to make. It has an intense flavour, so use it sparingly wherever a zingy taste is needed. A splash of ginger vinegar will add sparkle to chicken salad mayonnaise, and a tablespoonful can be used a salt substitute when making chicken broth. Vinegar is reputed to draw calcium from stocks bones into the broth and the ginger will give a distinctive Asian flair.

Ingredients

  • 1 Tbsp. fresh ginger, peeled and chopped
  • 1 cup apple cider vinegar

Directions

  1. To a sterilized glass jar, add chopped ginger and vinegar cover and let for up to 5 days, away from direct sunlight
  2. Check for flavour strength after 2-3 days
  3. When ready, strain and rebottle in the same jar

Ginger vinegar can be stored for up to one month in the refrigerator.

Recipe for Easy Spring Ginger Chicken Stew

This recipe is perfect for a light spring dinner.

Ingredients

  • 4 skinless, boneless chicken breasts
  • 4 cups chicken broth
  • 2 Tbsp butter
  • 2 Tbsp flour
  • 3 Tbsp dry sherry
  • 1 Tbsp ground ginger
  • 2 carrots, peeled and thinly sliced
  • 4 green onions, (spring onions or scallions) sliced
  • ½ cup snow peas
  • 1 apple, peeled, cored and chopped
  • salt and pepper
  • chopped fresh parsley

Directions

  1. Simmer chicken breasts in 4 cups broth 20 minutes or till done. Remove meat and slice or cut into chunks.
  2. Melt butter over low heat in a saucepan and add flour, stirring for 1 or two minutes.
  3. Add 1 cup of broth, whisking until smooth.
  4. Add rest of broth, sherry and ginger, carrots, green onions, snow peas, apple and sliced chicken.
  5. Cover and cook over medium heat for another 20 – 25 minutes or until vegetables are tender.
  6. Season with salt and pepper and sprinkle with chopped fresh parsley before serving.

Makes 4-6 portions.

Tasty Japanese-Style Ginger Marinade Recipe for Beef, Pork or Chicken

This recipe is a fast marinade for pan frying or BBQ. Mirin is Japanese sweet rice wine that is used only for cooking. It is usually available where soya sauce is sold. White wine or vermouth can be substituted for sake.

Ingredients

  • 2 Tbsp Japanese soya sauce
  • 2 Tbsp Sake
  • 2 Tbsp Mirin
  • 2” fresh ginger root, peeled and grated, plus juice

Directions

  1. Mix all ingredients together in a container.
  2. Add to beef or pork and marinate 15-20 minutes. This recipe can be easily doubled.

Serve with delicious gingery parsnip and carrot oven-baked fries.

Medicinal Properties of Ginger

According to Dr. Rudolph Ballentine in his comprehensive book Radical Healing, ginger (Zingiber officinale) is a superior remedy for motion sickness and helps to lower cholesterol. In Spontaneous Healing, Dr. Andrew Weil notes that ginger reduces abnormal inflammation.
