Cinnamon Sugar, Cinnamon Muffins and Cinnamon Almond Biscotti

Here are a few cinnamon infused recipes to serve to friends and loved ones on Valentine's Day.

Cinnamon is an ingredient used in many Valentine’s Day recipes. Cinnamon is a spice that is associated with a variety of mythological properties including beauty, healing, love, money, passion, protection, purification and spirituality.

Cinnamon Sugar Recipe

This mixture is a blend of cinnamon and sugar. Use it on top of buttered toast, muffins, cereals and oatmeal. It can also be used to sweeten tea and coffee.

Ingredients

  • 2 teaspoons cinnamon
  • 1/4 cup sugar

Directions

  1. Blend the cinnamon and sugar together in a small bowl.
  2. Store the sugar in a covered container until ready to use.

Cinnamon Muffin Recipe

Serve these delicious muffins at your Valentine’s Day breakfast celebration. This recipe makes 12 individual cinnamon muffins.

Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 teaspoon salt
  • 3 teaspoons baking powder
  • ½ cup granulated sugar
  • 1 teaspoon cinnamon
  • 6 tablespoons butter - chilled
  • 1 cup vanilla soymilk
  • ½ cup pecans - chopped

Directions

  1. Preheat the oven to 450 degrees.
  2. Sift the flour, salt, baking powder, sugar and cinnamon into a large mixing bowl.
  3. Add the chilled butter and cut into the dry ingredients using a pastry blender or two knives until it has the appearance of coarse corn meal.
  4. Stir in the soymilk and pecans.
  5. Use a 12 compartment greased muffin tin and fill each section approximately 2/3 of the way with the batter.
  6. Place the pan in the oven and bake for 12 to 15 minutes or until golden brown.
  7. Frost each muffin with some of the icing.

Icing Ingredients

  • 1 cup confectioner’s sugar - sifted
  • 1 tablespoon+ water

Icing Directions

  1. Add the confectioner’s sugar to a small bowl.
  2. Add just enough water to make a thin icing.
  3. When the cinnamon rolls have been removed from the oven place them on a large serving platter.
  4. Drizzle the icing onto the rolls until all of the icing has been used up.
  5. The icing will harden as it cools down to room temperature.

Cinnamon Almond Biscotti Recipe

This recipe makes a dry biscuit type cookie which is perfect to dunk into tea or coffee. Children will enjoy dunking them into milk or hot chocolate.

Ingredients

  • 2 eggs
  • ¾ cup brown sugar - packed
  • ½ cup vegetable oil
  • 1 teaspoon almond extract
  • 2 cups all-purpose flour
  • 1 ¼ teaspoons baking powder
  • 1 teaspoon cinnamon
  • ½ cup sliced almonds

Directions

  1. Preheat the oven to 350 degrees.
  2. Add the eggs, sugar, oil and almond extract to a large bowl and stir together.
  3. In another bowl sift together the flour, baking powder and cinnamon then stir into the egg mixture.
  4. Stir in the almonds.
  5. Evenly spread the dough onto the bottom of a greased 15x10x1 inch jellyroll pan.
  6. Place the pan in the oven and bake for 20-22 minutes until dark golden brown.
  7. Cut the biscotti into approximately 32 rectangular shape pieces as soon as they are removed from the oven.
  8. Let cool to room temperature before serving.
